Sumario:The aim of this research was to evaluate the use of sugar cane juice as a substrate for the production of Saccharomyces boulardii L. and ethanol production. Sugar cane is a herbaceous plant that grows in the coastal region of Ecuador during all months of the year, so the use of sugarcane was raised because this has economic and nutritional advantages over other means of commercial cultivation as YPG broth (Yeast extract, peptone and glucose), which is normally used for obtaining yeast-biomass. The experiment was conducted by sampling the cane juice (Saccharum officinarum L.) should be performed after a physical extraction process (grinding) of the juice, and when sugar cane has reached its proper state of maturity (6 months) then I would sterilize and proceeded to inoculate the yeast at two different concentrations, 2 and 2.5 g / L.
